The tabs along the centre are barely connected - so long as you have removed all the bolts they come apart easily. It's not them holding the panels on.

Have you checked your oil? It's definitely a problem with dry clutch plates. Mine did exactly what you describe every day till I pulled it apart and soaked the plates, then it was as good as gold. I suppose depending on mileage it could also be worn plates, but I wouldn't expect even the worst...

No idea. Yamaha refuse to acknowledge it exists. I spent months trying to get it sorted on mine, and in the end they just told me there was nothing wrong and stopped talking to me.

Never heard of the brake issue. The pop might just be the fuel mapping. Some MT07s have a nasty little misfire at or around tickover, which effects different bikes in different ways - from nothing at all to frequent stalling. Yours might just be in between.
